WHAT TO SUBSTITUTE FOR PAPRIKA

There are three different types of paprika; this spice is either sweet, or hot, or smoked. Understanding these three characteristics often help determine where a particular kind of paprika is from. “Regular” paprika tends to be sweeter, not really hot, and can be from California, Hungary, or South America. There are 8 different kinds of Hungarian paprika, and they can be sweet, hot, or pungent, and range in color from vibrant red to light brown. Spanish paprika is usually smoked, and can be mild or hot.  

If you are taking medications, consult your doctor before considering starting curcumin supplements. In vitro studies have shown that curcumin increases the risk of bleeding in patients taking diluents at the same time, so any possible drug interactions or concerns must be discussed with your doctor. Be warned, though; cayenne pepper powder is hotter than extra-hot paprika. Thus, make sure you use less than what is required in your recipe.

In addition to these two main types, there are also smoked paprika varieties, such as Spanish pimentón de la Vera, which are made from peppers that have been smoked over oak fires. This process gives the paprika a distinct smoky flavor that adds depth to dishes like barbecue, chili, and marinades.

Heat ½ cup of your oil in a small saucepan over medium heat. Add the garlic. Stir and let fry gently until the garlic turns golden yellow in color. However, it should NOT become crisp or fry intensely at all.

Finish off with 2 tablespoons of light soy sauce, and you’ve got a delicious jar of homemade chiu chow oil! (Feel free to re-season with up to a teaspoon of additional salt if needed. You may want to wait until it’s cooled first to get a more accurate read on the flavor.)
